INGREDIENTS
FOR ROTI DOUGH:
FOR ALOO PATTICE:
Potato - 4
Paneer (Grated) - 1 cup
Oil - 2 tbsp
Finely chopped Garlic - 3
Finely chopped Ginger- 1 inch
Finely chopped Chilli 2
Tomato sauce - 3 tbsp
Salt - 1 tsp
Coriander - 2 tbsp
FOR CHILLI VINEGAR :
Finely chopped Chilli - 3
FOR FRANKIE MASALA:
Chilli powder - 1 tbsp
Turmeric - ½ tsp
Cumin powder - 1 tsp
Coriander powder - 1 tsp
Garam masala - ½ tsp
Pepper powder - ¼ tsp
Salt - 1 tsp
FOR PANEER STUFF:
Paneer cube - 1 cup
Oil - 1 tbsp
Chopped Capsicum - 1 cup
Chopped Capsicum - 1 cup
Curd - 2 tbsp
Lemon - 1 tsp
Chopped Tomato - 1/2 cup
Frankie masala 1 tbspn
Corn - 1/2 cup
Method :
CHILLI VINEGAR :
- Take a small bowl and add 1/2 cup vinegar and 2 chopped chilli
- Mix well and rest it for 10 mins
FRANKIE MASALA :
- In a small bowl take Chilli powder - 1 tbsp , Turmeric - ½ tsp , Cumin powder - 1 tsp ,Coriander powder - 1 tsp ,Garam masala - ½ tsp ,Pepper powder - ¼ tsp and Salt - 1 tsp
- Mix well completely
- Frankie masala is ready !
ROTI PREPARATION:
- In a large bowl take 3 cup of wheat flour, 1 cup maida, 2 tsp salt , 2 tbsp oil/ghee , 1 tbsp Milk and add hot water and mix well.
- Knead to get a smooth and soft dough.
- Add oil on the top of the dough and Keep it aside for 20 mins (optional)
- Knead again and pinch a ball sized dough , dust with wheat flour and roll uniformly
- Add the rolled dough over hot tawa greased with oil , cook for a minute and flip over and Grease it with oil and cook both the sides of roti.
- Roti is ready. keep aside.
PANEER STUFF PREPARATION:
- Take a bowl and add 2 tbsp Curd, 1 tsp Lemon, 1 tbspn Frankie masala and mix well and add paneer and capsicum for 5-10 mins and Marinate .
- Now take a large kadai and heat 1 tbsp oil and saute Chopped Tomato, 1/2 cup Boiled Corn and add the marinated paneer and saute for 5-6 mins, Taste and add salt if needed and keep it aside
- Paneer stuff is ready!
ALOO PATTICE PREPARATION:
- In a large kadai heat 2 tbsp oil and saute chopped Ginger & garlic, 1 chopped chilli.
- Add 3 tbsp tomato sauce and saute until it turns aromatic.
- Add 2 tbsp of prepared frankie masala and cook for a minute.
- Now add smashed potato, 1 cup grated paneer and 1 tsp salt.
- Mix it well and make sure everything is well combined , Taste and add salt if needed.
- Add 2 tbsp chopped coriander leaves and mix well.
- Aloo mixture is ready.
- Now grease the hand with oil and prepare a pattice.
- Roast on medium flame until it turns golden brown and keep aside.
FRANKIE ASSEMBLING:
- Take the roti and spread 1 tsp chilli vinegar all across.
- Spread green chutney at one end and Place the aloo pattice at other end.
- Spread the paneer stuff in the middle.
- Top it with finely chopped onions, Also grate the cheese over it and Roll it tight.
- Enjoy aloo paneer Frankie with tomato sauce.
- Take the roti and spread 1 tsp chilli vinegar all across.
- Spread green chutney at one end and Place the aloo pattice at other end.
- Spread the paneer stuff in the middle.
